The Best Marinated Mushrooms

I’m blogging today with a frown. Why you might ask? Well, because I had tickets to the Mumford and Sons concert tonight but it was postponed until a day I can’t make it. So instead, I sit here and blog about mushrooms.

WWHHYYYY?!?!

On the bright side, at least I’ve still got a bowl full of The Best Marinated Mushrooms to drown my sorrows in.

I recently developed quite the obsession with marinated mushrooms. It all started with Whole Foods marinated mushrooms from their prepared food bar (which I’m also obsessed with). If you like mushrooms, you’ve GOT to marinate them.

The Best Marinated MushroomsMushrooms absorb flavor ssooo well. So, no matter what your favorite marinade is, I guarantee it’ll make your shrooms taste just like heaven.

This simple balsamic soy sauce marinade can be adjusted to fit your taste; so you can adjust the balsamic or soy if you like one better than the other. You really can’t go wrong with The Best Marinated Mushrooms.

Throw them on salads. Serve them as a side dish. Eat them with a fork straight out of your food storage container. I won’t judge. I even ate these for breakfast today. (I’m wild).

So, while I can’t be bringing you a super thrilling recap of my awesome time at the Mumford concert (tear), I can bring you this recipe for The Best Marinated Mushrooms. And it’s sort of the next best thing.

The Best Marinated Mushrooms

Ingredients

  • 2 (8-ounce) packages whole mushrooms (you can slice them if you wish!)
  • 1/2 tablespoon olive oil
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons soy sauce
  • 4 cloves garlic, minced
  • Scallions
  • Salt and pepper, to taste
  • Red pepper flakes, to taste

Instructions

  1. Place the mushrooms in boiling water and boil until soft, about 5 minutes. Drain and let cool.
  2. In a food storage container or bowl, add remaining ingredients and stir. Place the mushrooms in the marinade, toss to coat, cover and refrigerate at least 2 hours.
  3. Enjoy!
