These Easy Steak Fajita Lettuce Wraps are a super easy low-carb dinner recipe that’s ready in minutes and only requires a few simple ingredients. 

I try not to be too much of a diva in my everyday life, but I have one confession to make …

My name is Jordan, and I’m a birthday diva.

I’ve always loved birthdays, but I especially love my own. It’s the only time of year I can get all my friends in one place to help me celebrate! Oh, and cake.

So for this reason I treat the entire month of August as an excuse to splurge on countless birthday gifts to myself. I’m a walking example of “treat yo’self” this month. My wallet might not like it, but birthdays only come once a year, okay? So Friday get here quick!

Easy Steak Fajita Lettuce Wraps

Speaking of splurging, these Easy Steak Fajita Lettuce Wraps are the perfect simple weeknight dinner that only requires a few ingredients and very little time!

I use packaged fajita seasoning for ease, but feel free to mix your own! You can garnish these beauties with anything you want – Greek yogurt, lettuce, tomatoes, salsa, cheese, guac, you name it! I chose to leave mine simple, which was also great.

Ingredients

  • 1 tablespoon vegetable oil
  • 1 pound flank steak, skirt steak or carne asada
  • 1 large yellow onion, peeled and sliced
  • 2-3 bell peppers of various colors, sliced
  • 1 packet fajita seasoning
  • 1 head bibb lettuce, washed and stem removed

Instructions

  1. Mix the fajita seasoning according to package and let the steak marinate for one hour at room temperature, or longer in the fridge.
  2. Heat the oil in a pan until it's nice and hot. Sear the steak on both sides until desired doneness - about 3 minutes on each side. Remove from pan and set aside.
  3. Add a little more oil to the pan if necessary and saute the vegetables until soft.
  4. Slice the steak against the grain into slices.
  5. Top each lettuce cup with vegetables and steak. Garnish with whatever you like!
