Hello my people! I hope everyone had a fabulous Labor Day Weekend. LDW pretty much means summer is over. Which pretty much means it’s fall. Which definitely mean’s it’s FOOTBALL SEASON.
Is anyone else extremely excited for fall and football? I am I am I am.
When I saw this idea on Pinterest, I knew it would make an awesome appetizer for Sunday gatherings. Everyone loves buffalo chicken dip, and these Slow Cooker Buffalo Chicken Celery Boats are the bite-sized version of the dip … with no dipping required!
First, you make the slow cooker buffalo chicken, then you shred it up and top bite-sized pieces of celery with it! Greek yogurt adds a bit of creaminess to the chicken, and blue cheese crumbles on top add a bite of flavor.
I would venture to say that these would also be great with a little cheese thrown in the mix.
This is the perfect football recipe or any party recipe because you can throw the chicken in the slow cooker in the morning, then whip up the celery boats last minute and serve! Easy peasy.
Ingredients
- 2 chicken breasts
- 1 cup buffalo sauce
- 1/2 packet dry ranch seasoning mix
- 1/4 cup plain Greek yogurt
- 1 bunch celery, washed and cut into pieces
- Low fat blue cheese crumbles
Instructions
- Place the chicken breasts, buffalo sauce and ranch mix in a slow cooker and cook on LOW 4-6 hours. When it's cooked through, shred the chicken with two forks and stir in the Greek yogurt.
- Top each celery boat with chicken and sprinkle with blue cheese crumbles.
- Enjoy!
