Is anyone else super depressed about the fact that it now gets dark at 7 p.m.?
Not only does this increase my chances of twisting an ankle while running on the Lake Shore Path, it also means that I have to take these blog photos in the morning before work.
Which therefore means MAC AND CHEESE FOR BREAKFAST.
Okay fine, maybe I don’t hate it.
This Lightened Up Chicken and Broccoli Mac and Cheese is one of the easiest healthier mac and cheese recipes I’ve made, and it’s SO GOOD.
It uses Laughing Cow cheese, which is just 35 calories per wedge, and just a little bit of milk to make the cheese sauce.
Load it up with broccoli for your greens, chicken for protein, and lots of salt and pepper for taste and you’ve got yourself a truly crowd-pleasing meal everyone will love.
Plus, this recipe makes a LOT so you can eat it all week as leftovers. It still tastes great re-heated.
Lightened Up Chicken and Broccoli Mac and Cheese is the perfect way to squash that Kraft craving without all the calories. You’ll definitely add this to your rotation … it’s just so stinkin’ easy!
Ingredients
- 1 box whole wheat macaroni
- 2 crowns fresh broccoli, washed and chopped
- 2 chicken breasts, chopped into cubes
- 6 ounces Laughing Cow Creamy White Cheddar (the whole wheel, 6 wedges)
- 2 tablespoons low fat milk
- 1 tablespoon butter
- Salt and pepper, to taste
Instructions
- Boil the macaroni noodles according to package directions. In the last 2 minutes of boiling, add in the broccoli. Once cooked, drain all but a little bit of the water.
- While the pasta boils, heat butter in a separate pan. Add chicken and cook until brown on both sides. Add in cheese, milk, salt and pepper, Stir until the cheese melts - just a minute or so.
- Pour the chicken/cheese sauce over the noodles and stir to combine. Add more salt and pepper to taste. Enjoy!
