YOU GUYS …. I have some super duper exciting news to share. My sister is engaged! I’m so elated to be gaining a brother, and am so excited about planning the big wedding.

Even though the wedding is not for another year and a half, we’ve already started our healthy eating challenge within the family. If you follow me on Instagram you know that I like to treat myself. Often. Which is why I always always cook healthy at home. But now I’m only allowing myself 2 cheat meals per week.

We’ll see how long it lasts.

Skinny Caramel Cheesecake Stuffed Baked Apples

So since I’m entering into diet doom, I have to find ways to mix up the healthy eats in the kitchen. Insert: these 6-Ingredient Skinny Cheesecake Stuffed Baked Apples! Because what better way to celebrate apple season than by stuffing it with “cheesecake” and caramel and baking it?

These are seriously ahhhhh-mazing. It’s like an apple caramel cheesecake, but WAY easier to make (and way easier on the waistline).

Can you guys tell I love The Laughing Cow? The cheesecake filling is a simple mixture of The Laughing Cow cheese, egg, sugar and Greek yogurt. You can use low fat cream cheese too if you like! Skinny Caramel Cheesecake Stuffed Baked Apples

Just core out the apples, mix the filling, stuff and bake! SO easy and seriously sssoooo good. I’m telling you. You need these 6-Ingredient Skinny Cheesecake Stuffed Baked Apples in your life.

Skinny Caramel Cheesecake Stuffed Baked Apples

Ingredients

  • 2 apples
  • Caramel or dulce de leche sauce (optional but recommended)
  • 2 1/2 Laughing Cow Light Creamy Swiss wedges
  • 2 tablespoons nonfat vanilla Greek yogurt
  • 1 tablespoon white sugar
  • 1 egg

Instructions

  1. Preheat oven to 375 degrees F.
  2. Use a spoon or melon baller to scoop out the seeds and core of the apples.
  3. Mix the cheese, Greek yogurt, sugar and egg together in a bowl until creamy and smooth.
  4. Put 1 teaspoon of caramel sauce in the bottom of each apple. Pour half the cheesecake filling into each apple.
  5. Bake for 20 minutes or until the apple is soft and lightly browning on top.
  6. Top it off with more caramel sauce and enjoy!
