This Crockpot Turkey and Quinoa Tortilla Soup is the perfect way to use up those Thanksgiving leftovers!
Who’s out Black Friday shopping today?! I’m somewhat ashamed to say that we were already out fighting the crowds last night on Thanksgiving. Although I don’t agree with businesses making their employees work on my favorite holiday, I sometimes can’t resist going to Target or Best Buy just to see the crazy shoppers in their pajamas fighting for flat screens.
I actually saw a woman try to outrun a store employee after he yelled at her for stocking her cart with 6 TVs. (Apparently there was a per-person limit).
A very important lesson was learned: don’t mess with a woman and her 6 TVs on Black Friday.
So by now we’re all aware that I enjoy thinking up Thanksgiving leftovers recipes. This one might be one of my favorites.
Crockpot Turkey and Quinoa Tortilla Soup is as easy as dumping the ingredients in your slow cooker in the morning before you head out Black Friday shopping. It basically cooks itself, so will be ready for lunch or dinner when you are!
I know nobody wants to be cooking any more today, so this slow cooker soup recipe is the perfect solution to use up some of that leftover turkey.
I love this Crockpot Turkey and Quinoa Tortilla Soup simply with some tortilla strips on top. However, you can choose to top it with avocado, cheese, sour cream, cilantro, or anything your heart desires!

Ingredients
- 3/4 cup quinoa, thoroughly rinsed
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1/2 cup onion, diced
- 1 teaspoon minced garlic
- 2 cans diced tomatoes with green chilies (do not drain)
- 4 cups low sodium chicken broth
- 2 tablespoons taco seasoning
- 2 cups cooked turkey, shredded or diced
Instructions
- Spray your slow cooker with non-stick spray. Combine all ingredients in the slow cooker but the turkey. Stir to combine.
- Cook on LOW for 6-8 hours or HIGH for 3-4 hours. In the last 20 minutes of cooking, add the turkey.
- Serve topped with tortilla strips, avocado, cheese, sour cream, and any other additional toppings!
