4
Ingredients
- 4 whole wheat english muffins
- 4 eggs
- 4 slices ham (You can use ham steaks or sliced ham from a deli. If using sliced, I'd double it up)
- 4 teaspoons peach jam
- 1/2 cup pimento cheese (store-bought or homemade)
Instructions
- Coat a medium skillet with non-stick cooking spray. Add the ham and cook until lightly browned on each side, about 2-4 minutes per side. Remove ham from the pan and spread each slice with 1 teaspoon of peach jam. Set aside and keep warm.
- Re-coat the skillet with cooking spray and fry each egg to your liking.
- Toast each english muffin. To assemble sandwich, spread the english muffin with 1-2 tablespoons pimento cheese, top with egg and ham, and serve!
