Grain-Free Shredded Beef Tacos with Avocado Crema are gluten free, paleo-approved tacos that are super quick and easy to make!

Okay let’s talk about the four-letter word – diet. I’m one week into a low carb, low sugar, low dairy diet and the results have been just what I was hoping for!
I previously did a Paleo diet in college and loved the way it made me feel. Cutting out sugar, carbs and most dairy for me always does the following:
- Helps me control my appetite. I no longer eat when I’m bored (a bad habit I tend to have), I only am tempted to eat when I’m truly hungry. This helps me focus at work a TON and cuts down on the amount of calories I eat per day without having to ever be hungry.
- Completely eliminates my cravings. The more strict I am, the fewer cravings I have.
- Helps me focus and gives me more energy.
- Helps me lose weight fast with little to no bloating (I’ve lost 5 pounds in the first week).
My one complaint about this way of eating is that it involves a lot of meat and eggs, which is not the most sustainable way of living. This time, I’m making more of an effort to incorporate more vegetables in every meal.
For example, instead of enjoying two of these Grain-Free Shredded Beef Tacos with Avocado Crema, I’ll enjoy one of them with a big huge green side salad.

This recipe is the perfect way to use up leftover beef pot roast, or a creative way to use pre-made pot roast (I’ve purchased fully cooked pot roast from Costco and I LOVE it. Just microwave to reheat and serve).
I kept it simple with seasoned beef, cabbage mix, and a delicious avocado crema. However, you can choose to mix it up with toppings however you like: add onion, sliced avocado, corn, or whatever else you might like.

This dairy-free avocado crema recipe is a delicious and creamy topping that brings all of the ingredients together. Plus, it comes together in just minutes in your blender!

Ingredients
- 1 tablespoon coconut oil
- 2 cloves garlic, minced
- 1 pound leftover shredded pot roast
- 1 teaspoon salt
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon red pepper flakes
- 1/4 teaspoon dried oregano
- Shredded cabbage mix
- Siete foods grain-free tortillas (I like the cassava and coconut version)
- 1 avocado
- 1/4 cup water or coconut milk
- 1/2 cup fresh cilantro
- Juice from 1 lime
- 1/2 teaspoon salt
Instructions
- Heat oil in a skillet. Add garlic and cook until fragrant. Add pot roast and all seasonings. Stir to combine. (Add a little bit of water if the ingredients aren't combining well).
- Cook on low for about 5 minutes.
- Meanwhile, add all avocado crema ingredients to a food processor or blender and blend until smooth.
- To serve, top each tortilla with beef and cabbage mix. Top with avocado crema. Enjoy!
