No-Bake Healthy Pumpkin Pie Energy Balls

No-Bake Healthy Pumpkin Pie Energy Balls are a quick and easy paleo snack recipe that’s packed with protein powder, chia seeds, and so much pumpkin flavor.

Call me basic, but IT’S OFFICIALLY THE START OF PUMPKIN SEASON AND I CAN’T BE MORE EXCITED.

Fall foods are my absolute favorite. Give me allllll the pumpkin, apple, sweet potato, squash, soups.

Of course I get excited about every new recipe I developed, but these No-Bake Healthy Pumpkin Pie Energy Balls made me do a happy dance.

They’re soooooo stinkin’ easy to make, paleo-friendly, gluten free, and don’t require any baking (thank tha lawd).

Oh, and did I mention they’re FRICKEN DELICIOUS!? Holy smokes, you guys. These taste like pumpkin pie cookie dough balls of deliciousness. I seriously have to limit myself to just two per day because I could eat the whole batch.

I especially love these pumpkin energy balls before a workout. They’re called energy balls because they’re filled with protein and chia seeds, which give me energy to seriously crush a class.

What’s even better is that you can make these ahead of time to eat all week.

Preparing these energy balls is as easy as mixing a few ingredients together and rolling them into balls. Seriously, SO easy. And they require just a few ingredients.

I use some specific products to make these, but you can substitute any grain-free flour, and any nut butter you want.

If the consistency is off, either add more flour to make them more firm or add more pumpkin to make them more moist.

Here are some products I used to make No-Bake Healthy Pumpkin Pie Energy Balls:

  • Bob’s Red Mill Paleo Flour (I seriously LOVE this stuff. I also used it in my Paleo Chocolate Chip Banana Bread)
  • Betsy’s Best Cashew Butter with Cardamom and Chia Seeds

Ingredients

  • 2 tablespoons paleo flour (I use Bob's Red Mill Paleo Flour, coconut flour or almond flour would also work)
  • 1 tablespoon vanilla protein powder
  • 1 tablespoon pumpkin pie spice
  • 1 cup cashew butter (I use Betsy's Best, but any nut butter would work)
  • 1 tablespoon maple syrup (or honey)
  • 2 tablespoons pumpkin puree

Instructions

  1. In a large bowl, combine flour, protein powder and pumpkin pie spice.
  2. In a separate bowl, microwave cashew butter, syrup, and pumpkin puree for 30 seconds - 1 minute until it's easy to mix the ingredients together.
  3. Pour the cashew butter mix into the dry ingredient mix and stir to combine. Freeze the dough for about 10 minutes so it hardens enough to handle.
  4. Line a baking sheet with parchment paper. Roll the dough into about 20 balls and arrange on the baking sheet. Refrigerate until fully chilled, then store in an air-tight container in the refrigerator.

    I made these and want to know if I can freeze them? Also, how much Chia did you use? I really like them!

      I believe these will hold up great in the freezer! I used cashew butter with chia seeds in them, or you can add about 1/2 Tablespoon chia seeds.
