Maple Cinnamon Roasted Sweet Potatoes

These Maple Cinnamon Roasted Sweet Potatoes are a super quick and easy Thanksgiving side dish recipe that can be prepped ahead of time.

Can you believe there’s little more than a week until Thanksgiving?! Thanksgiving really doesn’t get the attention it deserves, especially this year being so close to Halloween.

Everyone is already talking about Christmas without taking the time to truly appreciate the beauty of stuffing your face full of carb-y foods and red wine, watching football, and spending time with family in scarves and boots!!!

Normally, I’m not a huge fan of trying to make healthy side dishes on Thanksgiving. I mean, Thanksgiving is not a time to be healthy. It’s a time to eat all the best foods with all the butter and gluten.

I am, however, a big fan of these Maple Cinnamon Roasted Sweet Potatoes. So this is about as healthy as I allow a Thanksgiving side dish recipe to be!

These roasted sweet potatoes are great because they’re super duper easy to make. The sweet potatoes can be chopped ahead of time, then quickly roasted right before eating.

Cinnamon and maple syrup add an amazing flavor to the sweet potatoes that are a great alternative to mashed sweet potato.

Of course, these aren’t only good for Thanksgiving. Maple Cinnamon Roasted Sweet Potatoes are also a great meal prep recipe to make at the beginning of the week to serve alongside chicken, pork or turkey. Yum!

Maple Cinnamon Roasted Sweet Potatoes

Maple Cinnamon Roasted Sweet Potatoes

Ingredients

  • 5 small sweet potatoes (about 2 pounds), peeled and cut into cubes
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1 tablespoon cinnamon
  • 1 tablespoon pure maple syrup

Instructions

  1. Preheat oven to 425 degrees F.
  2. In a large bowl, toss sweet potatoes with olive oil, salt, pepper and cinnamon.
  3. Line a baking sheet with foil and arrange sweet potatoes in a single layer. Roast for 20 minutes.
  4. Remove the sweet potatoes from the oven and toss with maple syrup. Re-arrange on the pan and roast for an additional 10-15 minutes, until the potatoes are tender and starting to brown.
  5. Serve warm with additional cinnamon sprinkled on top if desired. Enjoy!
