This Air Fryer Cauliflower Gnocchi with Sausage and Brussels Sprouts recipe is a delicious fall recipe with cauliflower gnocchi, chicken sausage, brussels sprouts and pesto! It’s super easy to make with just 4 ingredients, so it’s the perfect weeknight meal.

Do you have an air fryer? People have been asking me if I like it since I got it, and I’ve had so many mixed feelings!

Air Fryer Pros:

  • It’s small and easy to use
  • It’s super quick and easy to clean
  • It makes things crispier than simply baking them

Air Fryer Cons:

  • Sometimes things don’t cook evenly if you over-crowd it, but it’s hard not to overcrowd it unless you have time to do three batches (which …. Like …. No)
  • It’s one more appliance taking up room in your kitchen, when in reality, most things can cook similarly in an oven or toaster oven.

How I Use My Air Fryer:

  • Brussels Sprouts – this is what I make most often in the air fryer. They come out super crispy and SO delicious. It’s Pat’s favorite vegetable! I just cut the sprouts in quarters, toss with olive oil, salt and pepper, and cook at 380 degrees for 20-ish minutes (shake the basket every 5 minutes)
  • Sweet Potato Fries – I’ve yet to perfect cooking these because I tend to over-crowd, but they still taste really good and crispy!
  • Frozen Foods – frozen tater tots, pizza rolls, mozzarella sticks, potstickers … pretty much any frozen food is better if cooked in the air fryer
  • Chicken Wings – probably one of my favorite things to make (recipe here)! It’s SO easy, not messy, and they get real crispy
  • Homemade Chicken Tenders – I’m currently testing a new air fryer paleo chicken tenders recipe. My seasoning isn’t perfect yet, but the method is AMAZING.
  • Cauliflower Gnocchi – if you’re not a fan of soft gnocchi, air frying it gives it much better texture

I make both the cauliflower gnocchi and the brussels sprouts in the air fryer because I like them both to get nice and crispy. Then, just toss both with cooked chicken sausage and pesto.

How to Make Air Fryer Cauliflower Gnocchi

Making cauliflower gnocchi in the air fryer is super easy! Just arrange the gnocchi in the basket, spray with avocado oil, and cook on 400 degrees for 10-12 minutes or until golden brown.

I like to check them often so they don’t over-cook, and shake the basket to make sure they cook evenly. If you’re more patient than I am, you could pause the cooking and use tongs to flip each one over halfway through cooking. This ensures the most even cooking, but takes much more time than just shaking. So, you know which method I’m choosing.

I buy 100% avocado oil spray from Costco and it’s what I use every time I’m air frying. It’s the best!

4-Ingredient Air Fryer Cauliflower Gnocchi with Sausage and Brussels Sprouts

A quick and easy dinner recipe that only requires 4 main ingredients!

Ingredients

  • 1 pound brussels sprouts, trimmed and halved or quartered
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1 bag Trader Joe’s cauliflower gnocchi
  • Avocado oil spray
  • 4 chicken sausage links, sliced
  • 1/4 cup pesto
  • Parmesan cheese, grated, for topping (optional)

Instructions

  1. In a medium bowl, toss brussels sprouts with olive oil, salt and pepper. Preheat air fryer to 380 degrees. Place brussels sprouts in the basket and cook for 20 minutes, shaking the basket every 5 minutes, until brown and crispy. Remove and set aside.
  2. Change the air fryer temperature to 400 degrees. Spray the basket with avocado oil spray. Arrange cauliflower gnocchi in a single layer and spray them with avocado oil spray. Cook for 10-12 minutes or until golden brown. Shake the basket halfway through cooking and spray with more oil to cook evenly.
  3. While the air fryer cooks, cook the chicken sausage in a medium stock pot until golden brown. Turn off the heat and add the cooked brussels sprouts, cauliflower gnocchi and pesto and toss to combine. Serve hot sprinkled with Parmesan cheese.

Notes

You can also cook the brussels sprouts in the stock pot
after you cook the chicken sausage if you want them less crispy brown.
