I have to say … working from home has its perks. I have hours of uninterrupted time to work, I don’t have to get ready or commute, and I can make my own lunches in my own kitchen every day!

These Lemony Tuna Cakes with Lemon Pepper Mayonnaise is one of my favorite lunches to make.

It’s a budget-friendly recipe for crispy tuna cakes that are packed full of fresh lemon flavor.

This recipe comes together in a hurry and uses ingredients you might already have in your pantry!

The lemon pepper mayonnaise really rounds out this meal. I love serving these on a bed of greens with the mayo to dip on the side. YUM.

Even if you’re not a huge tuna fan, frying it into patties might surprise you. It’s sort of like a more casual crab cake.

Lemony Tuna Cakes

Lemony Tuna Cakes with Lemon Pepper Mayonnaise

Yield: 3 Tuna Cakes

Ingredients

For the Tuna Cakes

  • 2 Tablespoons Panko breadcrumbs
  • 1 large egg, beaten
  • 1 (2.6oz) pouch tuna in water
  • 1 teaspoon Dijon mustard
  • 2 teaspoons fresh parsley, chopped
  • 1/2 teaspoon lemon zest
  • 1/4 teaspoon garlic powder
  • Salt and pepper, to taste

For the Lemon Pepper Mayonnaise

  • 1/2 cup mayonnaise
  • 1 garlic clove, minced
  • 1 teaspoon lemon zest
  • 1 1/2 teaspoons lemon juice
  • Black pepper

Instructions

  1. In a large bowl, mix all tuna cake ingredients until combined. Form the mixture into three patties.
  2. Heat oil in a large skillet over medium heat. Add tuna cakes and cook 3-4 minutes per side, until golden.
  3. To make the mayonnaise, place all ingredients in a small bowl and mix to combine.
  4. Serve tuna cakes over arugula with mayonnaise as dipping sauce.

Notes

You can also substitute canned salmon or chicken!
