It’s back to school time .. and while I’m not going back to school nor do I have kids who are going back to school, I know plenty of parents who are adjusting to their new busy schedule.

That’s why it’s the perfect time for Beefy Cheesy Freezer Burritos! When I saw this recipe on Stealth Health Instagram, I knew I had to try it.

These meal prep frozen burritos are so great because you can make a big batch ahead of time and keep them in the freezer for grab and go meals.

They’re so so so easy to make on a Sunday or when you have the time, and they reheat as if you just made them fresh. The creamy, cheesy beef mixture is the perfect burrito filling the whole family will love.

How to Freeze Burritos

  • Freezing the burritos is SO EASY. Assemble them all and wait for them to cool.
  • Wrap them tightly in tin foil. If you plan to freeze them for a while, wrap them first in plastic wrap and then in tin foil. This will help ensure no air gets to them, which is what causes freezer burn.
  • Label them with a permanent marker so you know what they are and when you made them, and stick them in the freezer!

How to Reheat Frozen Burritos

You’ll be amazed that these Cheesy Beefy Burritos taste super fresh when you reheat them. To reheat frozen burritos, first either thaw them in the refrigerator or microwave them for 2 minutes so they’re no longer frozen.

Then, the trick is to get a nice crispy shell. There are a couple ways to do it:

  • Bake – preheat the oven to 400 degrees F. Spray a baking sheet with non-stick spray and put the burritos on the tray. Bake for about 10 minutes
  • Pan Fry – preheat a pan and spray it with non-stick spray. Fry the burrito for about 2 minutes on each side until golden brown. (If you use this method, make sure to microwave the burrito for a couple minutes first so the filling heats through)
  • Air Fry – place the burrito in your air fryer for about 6 minutes until it’s nice a crispy.

How to Make Frozen Burritos for Meal Prep

The recipe for these Cheesy Beefy burritos is one of my favorite fillings, but you can use this method to make any frozen burritos you want! Here are some ideas to mix it up:

  • Use ground turkey or shredded cooked chicken instead of ground beef
  • Add in vegetables like bell peppers, jalapeños or corn
  • Add in beans or use beans instead of meat if you’re a vegetarian
  • Dip in plain Greek yogurt or sour cream and a side of hot salsa to amp up the flavor

Cheesy Beefy Freezer Burritos: Perfect for Meal Prep

These Cheesy Beefy Freezer Burritos are super easy to make and are the perfect thing to make ahead of time. Keep these on hand in your freezer for a quick and easy lunch or dinner.

Ingredients

  • 1 tablespoon oil
  • 1 pound lean ground beef (or ground turkey)
  • 1/2 white or yellow onion, diced
  • 1 packet taco seasoning
  • 1/2 cup plain Greek yogurt (or sour cream)
  • 1/2 cup enchilada sauce (I like Siete brand)
  • 1/2 cup shredded cheddar cheese
  • 2 Laughing Cow cheese wedges (optional, you can also use cream cheese)
  • Chopped cilantro, to taste
  • 6 burrito shells

Instructions

  1. Heat oil in a pan and cool ground beef and onion until the meat is no longer pink and onion is cooked.
  2. Add in taco seasoning, Greek yogurt, enchilada sauce, cheddar cheese and Laughing Cow cheese and stir until combined and creamy. If it doesn't look creamy enough, you can add more of any of these ingredients. Stir in cilantro.
  3. Fill each burrito shell with the meat mixture and roll.
  4. Roll each burrito in tin foil and freeze.
  5. To reheat, thaw in the refrigerator overnight or microwave for 2 minutes.
  6. Bake at 400 degrees F for about 10 minutes, fry in a pan for about 2 minutes per side, or air fry for about 6 minutes. Enjoy!
