I hope everyone had an amazing Memorial Day! I had an amazing weekend in sunny Florida with my family with hardly any social media and zero work. Now I’m back, refreshed as ever and ready to make this Jerk Chicken Cauliflower Rice Bowls recipe on repeat.

My mom and sister were the ones who actually taught me how to make these bowls and I’ve been hooked ever since. Cauliflower rice bowls are one of my all-time favorite meal prep recipes because they’re a great mix of protein, vegetables and sometimes fruit.

Thee Jerk Chicken Cauliflower Rice Bowls are PACKED with flavor with the combination of coconut rice, pineapple, Jamaican jerk chicken, avocado and more.

When I was in Jamaica this January, we learned how to make Jamaican jerk chicken on the beach. Ever since I tried it, I’ve wanted to recreate it at home.

I love this recipe as a chicken meal prep recipe, but it’s also a great recipe to serve for family dinner or bring to a barbecue. For serving a crowd, just mix all the ingredients up in a big bowl and dish out into individual portions.

For meal prep, all ingredients but the lime, cilantro and avocado can be microwaved together when you’re ready to eat!
