Mom’s Famous Homemade Cinnamon Rolls

December 4, 2014

These gooey, soft homemade cinnamon rolls are perfect for a weekend breakfast or the holidays. They’re super simple to make and come out perfectly soft in the center and just a bit crisp on the outside.

Mom's Famous Homemade Cinnamon Rolls

I finally watched Julie & Julia for the first time over Thanksgiving break after a friend recommended it to me. Of course, I loved the fact that it was about a food blogger, but one part that stood out to me was when Julie first started her blog and didn’t have very many readers yet. A notification popped up for a comment that she was all excited about, when she realized that it was just her mom commenting.

This made me laugh because I’m sure a lot of us bloggers can relate. At first, my mom was the only one who commented on my blog and she’s still one of my biggest fans. But a lack of readers at first is no reason to stop blogging! I’m still (slowly but surely) gaining more eyes on my corner of the interwebs, but I continue to blog for me.

Baked Sriracha Turkey Meatballs

November 29, 2014

Not your average turkey meatballs. These Baked Sriracha Turkey Meatballs are delicious turkey meatballs that are baked in the oven and slathered in a sweet Sriracha glaze.

Baked Sriracha Turkey Meatballs

I love Sriracha sauce so much, I wish I could marry it. And the same goes for meatballs.

So pretty much when I dream of my wedding, these Baked Sriracha Turkey Meatballs are standing at the end of that isle. They’re that good.

The sauce reminds me of a teriyaki sauce with an extra kick of spice. These would be great over brown rice or quinoa so all that delicious sauce soaks into the rice, but I just ate them plain! These would also be great as party meatballs – just roll them a little bit smaller and serve them with tooth picks. Then sit back and watch your guests give you all the compliments.

Mushroom, Spinach and Feta Frittata

November 5, 2014

Mushroom, Spinach and Feta Frittata is an easy breakfast recipe that’s perfect for brunch, lunch, dinner or weekday breakfasts.

Mushroom, Spinach and Feta Frittata

I made you a frittata today! With mushrooms. And spinach. And cheese (duh).

I’ve always considered myself a pretty healthy eater, but when my doctor told me during my most recent appointment that I need to eat more leafy greens, I got a little offended. Then I pretended that it’s just something he has to tell all his patients. Because it’s just generally good health advice. It must have nothing to do with my iron deficiency. Nope. I’m a perfect healthy eater. With perfectly healthy eating habits. (If anyone tells him about all the Halloween candy I ate this week, I’ll give you a noogy).

At least that wasn’t half as bad as the time I ate Cheetos right before getting blood drawn. Needless to say, I had to return for further testing after my “junk food” levels were abnormally high. *Face palm.*

Egg Roll In A Bowl

November 3, 2014

Egg Roll In A Bowl is a low-carb recipe for a Chinese takeout favorite. All the flavors of an egg roll in a super easy, healthy one-pot recipe … without the egg roll wrapper!

Egg Roll in a BowlHosting parties is hard.

Now that I’ve officially entered adulthood, gone are the days of “parties” that consist of telling everyone to BYOB and “picking up” is as far as cleaning goes.

Nope. Now that I’m an adult, parties mean scrubbing every inch of the apartment, cooking/baking themed treats, and of course providing refreshments for guests.

And it’s a lot of work.

Pumpkin Chia Pudding Parfait

October 30, 2014

This Pumpkin Chia Pudding Parfait is a decadent dessert, breakfast or snack made of pumpkin pie chia pudding and Noosa Pumpkin Yoghurt!

Pumpkin Chia Pudding Parfait

Have you heard of Noosa Finest Yoghurt? Chances are you’ve probably seen it at your local grocery store. It’s pretty hard to miss in its trendy packaging. There’s just something about a well-design tub of yogurt that makes you want to buy it. Or is that just me?

Well, I would suggest following that desire to buy the cute tub of yogurt because, not only is Noosa Yoghurt cute, it’s also deeee-licious. And it’s made from happy cows! Yogurt is just one of those foods that is largely hit or miss for me depending on the specific brand. No one brand of yogurt tastes the same, and I can honestly say that Noosa is one of my favorites. When I saw the pumpkin flavor at Target – coincidentally one of my favorite stores – I knew that cute tub needed to come with me. Then I ate it in two … eerr … one sitting.

Chicken Chili Cheese Omelet

October 27, 2014

An amazing leftover chili recipe that’s perfect for brunch or breakfast for dinner. Chicken Chili Cheese Omelet is a cheesy omelet stuffed with chicken chili and cheddar cheese.

Chicken Chili Cheese OmeletWhenever I’m feeling lazy and don’t want to cook, I always turn to B for D. Breakfast for dinner is the perfect solution when you’re cooking for one because a. breakfast food is super quick and easy b. eggs, waffles, pancakes, etc can always be made for one or saved for later and c. it’s delicious! Especially if you never had time to make a good breakfast before work in the mornings, splurge on breakfast for dinner!

I had some leftover Skinny Crockpot Chicken Chili and needed to repurpose it into something that I hadn’t already eaten multiple bowls of, so this Chicken Chili Cheese Omelet was the perfect recipe. I love savory breakfasts, and this  omelet is the perfect combination of fluffy eggs, slightly spicy chicken chili, and gooey cheese.

Skinny Crab Rangoon Egg Rolls

October 24, 2014

Greek yogurt is used to make a healthier version of crab rangoons! Skinny Crab Rangoon Egg Rolls are a recipe for baked crab rangoons in egg roll shape. Skinny Crab Rangoon Egg Rolls I have a serious case of RBF. I’m never really that grumpy, and I like to think that I’m actually pretty friendly in most social situations. However, my face reads otherwise. In college, I couldn’t count on one hand the amount of times people would approach me and ask me, “What’s wrong.” Or simply walk past me, look at me, and say, “SMILE!” It got to the point where my friends were trained to step in and come to my aide with a general response of, “Nothing’s wrong, that’s just her face.”

I only bring this up because I recently attended my boyfriend’s brother’s wedding and had a genuinely amazing time. However, when scrolling through the wedding photos, to my horror the wedding photographer captured my Resting Bitch Face quite perfectly. …
