Boy, do I love pasta. It was a regular staple in college because it was one of the cheapest meals you could make!

Sadly, I swore off buying pasta a few years ago when I stopped buying any wheat products. Since then, I’ve tried every substitute known to man, starting with vegetable substitutes like Zucchini noodles, spaghetti squash and broccoli slaw.

Now, I’ve discovered the wonderful world of gluten-free pasta substitutes and I couldn’t love them more! Most notably, Banza and Trader Joe’s lentil pasta.

15-Minute Chicken Sausage Pasta Meal Prep Bowls

Here are some of my favorite pasta alternatives:

  • Banza pasta made from chickpeas and a few other ingredients.
  • Trader Joe’s Lentil pasta made of JUST lentils (no other ingredients)
  • Miracle Noodles (otherwise known as shirataki noodles)
  • Zucchini noodles
  • Spaghetti squash
  • Broccoli Slaw (sold by the bagged spinach in my grocery store)

These 15-Minute Chicken Sausage Pasta Meal Prep Bowls are seriously ones that I could live off of every week and never get bored. They’re so so easy to make, quick to assemble and only require four ingredients. They’re perfect for busy weeks.

I use Rao’s Homemade pasta sauce, which I’ve pretty much deemed the best pasta sauce ever. It’s so expensive, but truly worth the cost.

I also love to go to Costco and buy fully cooked chicken sausage. Any flavor works well in these bowls – mix it up!

I freeze most of the pack, and use four at a time. Since they’re pre-cooked, all you have to do is slice them and place them in your meal prep containers. Then, just make sure you microwave the bowls enough to heat the sausage through!

Of course I love a time saver, so I use a big bag of frozen veggies to make these. If you’re not so into that, you can use whatever you have in your fridge! The possibilities are endless. It’s a perfect clean-out-the-fridge recipe.

This recipe makes enough for 4-5 bowls, so in just 15 minutes, you’ll have lunches for the week!

15-Minute Chicken Sausage Pasta Meal Prep Bowls

Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes

Ingredients

  • 1 box Banza pasta (or other pasta of choice)
  • 2 cups Rao’s Homemade pasta sauce (I buy the spicy kind. You can use any pasta sauce, homemade is even better!)
  • 1 tablespoon olive oil
  • 1 big bag of frozen mixed vegetables
  • 4 fully-cooked chicken sausage links, sliced

Instructions

  1. Cook pasta according to box directions until al dente.
  2. Meanwhile, add olive oil to a skillet with vegetables and chicken sausage. Cook until vegetables are al dente.
  3. Divide pasta and vegetable mixture amongst 4-5 glass meal prep containers. Top each with ½ cup of pasta sauce.
  4. Cover and refrigerate until ready to eat.
  5. Microwave 1-2 minutes and enjoy!
