Did I ever tell you about the time I realized I had been using my oven wrong for over a year?

After many raw loaves of bread and burnt cookies, I had come to the conclusion that baking just isn’t for me. I’m much more of a cooking girl.

It wasn’t until my roommate watched me turn on the oven with fingers crossed one day, that she pointed out I was turning the convection oven setting on instead of the regular oven. And I had been doing so since we moved into our apartment in May of 2017.

That’s what my mom would call a “blonde moment”.

So I’m happy to report that I am now capable of using my oven correctly. And I’m even happier because it means I can make this Whole Wheat Pumpkin Bread with Chocolate Chips on repeat.

Growing up, the only way my mom could get me to eat breakfast was if she made muffins or bread. I’ve always LOVED homemade bread more than any other dessert.

From my Paleo Chocolate Chip Banana Bread, to zucchini bread, to pumpkin bread – give. Me. All of it.

Whole Wheat Pumpkin Bread with Chocolate Chips

This Whole Wheat Pumpkin Bread with Chocolate Chips is a healthier version of your typical bread because it uses whole wheat flour in place of white flour.

You seriously don’t miss the white flour in this because the pumpkin still makes it super moist and delicious.

Of course, the addition of chocolate chips just takes this pumpkin bread to the next level. I use Enjoy Life chocolate chips. YUM!

Whole Wheat Pumpkin Bread with Chocolate Chips

Ingredients

  • 1 1/2 cups whole wheat flour (I use Bob's Red Mill)
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 eggs
  • 1/2 cup coconut oil
  • 1/2 cup honey
  • 1/2 teaspoon pure vanilla extract
  • 1 cup pumpkin puree
  • 1/2 cup chocolate chips (I use Enjoy Life)

Instructions

  1. Preheat oven to 350 degrees F.
  2. In a large bowl, mix flour, pumpkin pie spice, baking soda, baking powder and salt. Make a well in the center of the dry mixture and add eggs, coconut oil, honey, and vanilla extract.
  3. Mix together using a fork until just combined (do not overmix). Fold in the pumpkin puree and chocolate chips.
  4. Grease (yes, grease!) a large baking pan and pour in the batter.
  5. Bake for 30-40 minutes or until a knife inserted into the center of the bread comes out clean.
  6. Let cool completely before slicing.
