It’s officially time to start thinking about THANKSGIVING … AKA my all-time favorite holiday.

I’m a bit sad this year because it’s the first year in about 10 years we’re breaking our annual family Thanksgiving traditions. Each year, my sisters and I spend the holiday at my mom’s house in North Carolina. We run the Turkey Trot, cook together, hit up Black Friday sales, and relax as a family.

This year, because both of my sisters will be married by Thanksgiving, they are spending the holiday with their husbands’ families. How sad is it when family traditions change?!

I’ll just have to eat extra to make myself feel better, I guess.

Balsamic Roasted Mushrooms

If you’re looking for a super easy Thanksgiving side dish recipe, or just a healthy side dish for any dinner, might I recommend these Balsamic Roasted Mushrooms?!

They’re super duper easy to make, and turn out great every time. The balsamic marinate adds amazing flavor to this dish. The hardest part about making it is washing the mushrooms!

Can someone please invent a device that makes washing mushrooms easier?

Balsamic Roasted Mushrooms

Balsamic Roasted Mushrooms are as easy as whipping up a quick balsamic sauce, and roasting them for about 20 minutes.

The mushrooms come out of the oven perfectly cooked and ready to be topped with your favorite fresh herbs.

I think any fresh herbs would work here – basil, thyme, parsley, rosemary … you choose!

Balsamic Roasted Mushrooms

To make things even easier, wash the mushrooms and prepare the balsamic sauce ahead of time. So all that’s left to do before the big meal is place them on a cookie sheet and bake!

Ingredients

  • 1 large clove garlic, minced
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon maple syrup
  • 1 teaspoon dijon mustard
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 16 ounces whole mushrooms
  • 2 tablespoons parsley, chopped

Instructions

  1. Preheat oven to 425 degrees F. In a large bowl, combine all ingredients listed before mushrooms. Add mushrooms to the bowl and toss to coat.
  2. Using a slotted spoon, place mushrooms in a single layer on a baking sheet. Save the extra balsamic sauce and set it aside.
  3. Bake for 10 minutes, flip, and bake for an additional 8-10 minutes.
  4. Transfer the mushrooms to a serving bowl and top with extra balsamic sauce and parsley.
  5. Enjoy!
