For someone who doesn’t normally have a sweet tooth and also doesn’t personally enjoy baking, I’ve been on quite the baking spree lately! 

First it was my 5-Minute Paleo Banana Muffins, then these 4-ingredient peanut butter cookies, and now it’s this Paleo Blueberry Lemon Bread. It has been so much fun experimenting in the kitchen with grain-free baked goods. And boy, do they taste good! 

I love anything lemon in the Spring (see these blueberry lemon quesadillas and this delicious soup). Especially when you add blueberries in the mix … this Paleo bread recipe has me wishing for warm weather ASAP!

If you are feeding anyone with a grain intolerance, this recipe would be especially perfect for Easter or Mother’s Day! 

I personally just made the entire loaf for myself! To eat it, I like to take a slice and grill it on both sides in a pan until nice and brown and crisp (I use a bit of olive oil).

Then, I’ll serve it with vanilla yogurt, manukka honey, and nuts … or sometimes I’ll add fruit, or almond butter. The more toppings the better.

I love this recipe for Paleo Lemon Blueberry Bread because it’s so easy to make and uses ingredients I usually always have on hand anyway.

This loaf would be even better with a coconut cream icing!  

How to Make Paleo Bread

  1. How to Make: Don’t undercook! Grain-free bread has a very moist consistency, unlike regular bread. To control this a bit, make sure to cook the bread until a knife inserted in the center is clean. 
  2. How to Store: Store the bread covered at room temperature for up to 4 days. 
  3. How to Freeze: This paleo bread freezes beautifully! I recommend wrapping individual slices in plastic wrap and freezing for individual portions. Then, just thaw, pop it in the toaster, or grill it on a pan. 
  4. Paleo Lemon Blueberry Bread without Coconut Flour: I have made this bread by substituting arrowroot starch for coconut flour. The conversion is almost, but not exactly, 1:1, so be sure your batter looks not too wet or too dry before pouring it in the pan.

Paleo Lemon Blueberry Bread

Paleo Lemon Blueberry Bread is an easy paleo bread recipe that's perfect for Spring!

Ingredients

  • 2 cups almond flour
  • 2.5 tablespoons coconut flour
  • 1.5 teaspoon baking soda
  • 3 eggs
  • 2 tablespoons almond milk
  • 1/4 cup honey or maple syrup
  • 2 small bananas, very ripe, mashed
  • 1/4 cup coconut oil, melted
  • Juice and zest of 1 lemon
  • 1 cup fresh blueberries

Instructions

  1. Preheat oven to 350 degrees F.
  2. Combine almond flour, coconut flour and baking soda in a medium bowl.
  3. Combine all wet ingredients except blueberries in a separate bowl. Pour wet ingredients into the dry ingredients and mix to combine. Gently fold in blueberries.
  4. Line a 8x4 inch loaf pan with parchment paper and pour the batter in.
  5. Bake for 25 minutes, then carefully cover with foil and bake for another 25-35 minutes. The top should be golden brown and a knife inserted in the center should come out clean.
  6. Remove and let cool completely before cutting.

Just ok. Needs salt and the lemon flavor isn’t strong enough. Maybe the banana flavor is overpowering it?

Eggs eggs eggs, ugh :/ I am googling for paleo recipes without eggs and still end up at recipes with eggs.

1 tsp baking soda and 1 tbs vinegar = 1 egg. This would be a great recipe to use this replacement
