Welp … I figured I’d post one more indulgent recipe for football season before we launch into full blown health mode for the new year!

This recipe is near and dear to my heart because it’s a Chicago staple. Here in Chitown, we tend to call these sandwiches “Cheesy Beef” … but that didn’t quite work out for the old SEO rankings of this post.

It’s a classic Italian beef sandwich that’s super easy to make using an Instant Pot. These are served on an Italian roll piled high with juicy beef, giardiniera, and toasty cheese.

If you’ve had an Italian Beef before you’re probably familiar with how delicious a dunk in the au jus (leftover cooking juices) is. You’re going to need a couple (dozen) napkins, but your taste buds will thank you.

Instant Pot Italian Beef

The first thing I always have to start by saying is that the quality of your beef MATTERS.

I use almost exclusively Butcher Box meats when making anything beef or pork (Italian beef, pulled pork, steaks, etc). It’s 100% grass fed and finished and I swear you can taste the difference.

As long as you choose a good quality of beef, you really can’t mess these up! Just throw everything in your Instant Pot and let it cook until the meat falls apart and you have a perfect au jus ready for dipping.

My favorite part of these Instant Pot Italian Beefs is that they’re toasted at the end.

Pile on the beef and giardiniera, layer with cheese, and pop them in the oven until the cheese is melty and the bread has a nice toasty crunch.

Before serving, spoon on a bit of that delicious au jus so it soaks into the bun … OMG my mouth is watering just thinking about it.

This recipe for Instant Pot Italian Beef is one of the easiest ways to make it, but turns out SO delicious every time.

Ingredients

  • 1 (3 pound) chuck roast
  • 1 teaspoon garlic powder
  • 1 teaspoon dried minced onions
  • 1 tablespoon Italian seasoning mix
  • Salt and pepper, to taste (I use about 1 teaspoon each)
  • 2 Tablespoons olive oil
  • 1 Cup low sodium beef broth
  • 1 Cup sliced pepperoncini peppers with juice
  • Hard rolls
  • Provolone cheese, sliced or shredded
  • Giardiniera

Instructions

  1. Cut the chuck roast into 6 pieces.
  2. Mix the garlic powder, minced onions, Italian seasoning mix, salt and pepper together in a small bowl. Season the beef really well on all sides.
  3. Turn your Instant Pot on saute mode. Add the olive oil then add the beef in a single layer (work in batches so they don't overlap). Cook the beef for about 2-3 minutes per side until nice and brown on all sides.
  4. Add beef broth to the Instant Pot along with the browned beef. Use a wooden spoon to scrape up all the brown bits from the bottom of the pot. Add in the pepperoncini.
  5. Place the lid on the Instant Pot, turn the vent to Seal, and cook on High Pressure for 50 minutes. Allow it to natural release for 10 minutes. Shred the beef and return it to the liquid.
  6. Preheat oven to 350 degrees F. Spoon the Italian beef onto a roll, top with provolone cheese, then top with giardiniera. Bake sandwiches on a baking sheet until the cheese melts. Spoon some of the cooking liquid on top of each sandwich before serving.
