If you’re anywhere on social media, I’m sure you’ve seen the viral feta baked pasta from Tik Tok. It’s been so popular that grocery stores were running out of blocks of feta!

Of COURSE I had to make it myself, but I wanted to put my own spin on it.

Because my version uses Laughing Cow Light Cheese, you don’t have to worry about feta being in stock. And, it’s just a little bit lighter than using feta.

How to Make Easy Cheesy Baked Pasta

  • One of the best things about this recipe is how EASY it is. You literally just throw the ingredients in a baking dish and bake, boil some pasta, and mix it all together.
  • The only difference between this version and the original is replacing the cheese with a block of feta. Both ways are DELISH.
  • I like making this as meal prep topped with baked chicken breast and roasted veggies.
  • If your sauce pasta is too thick, just add a bit of pasta water to thin it out.
  • Use any pasta you want! I’m just obsessed with cavatappi and love the Banza brand.

I like Laughing Cow because I like to eat this Cheesy Baked Pasta with baked chicken breast. With the addition of chicken breast, the macros are 18g Fat, 30g Carbs, 41g Protein. Talk about the perfect meal prep recipe!

This Easy Cheesy Baked Pasta is just like the Tik Tok feta baked pasta, but instead of feta it uses Laughing Cow Cheese, which is just a bit lighter!

Ingredients

  • 1 container cherry or grape tomatoes
  • 1/4 cup olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cloves garlic, crushed
  • 1 container Laughing Cow Light Cheese (8 wedges)
  • 1 box Banza pasta (I like cavatappi)
  • Fresh basil, chopped

Instructions

  1. Preheat oven to 400 degrees F.
  2. Place tomatoes in a baking dish. Cover with olive oil, salt, pepper and garlic and stir to combine.
  3. Make room to place the cheese wedges together in the center of the tomatoes. Bake for 30 minutes.
  4. Meanwhile, cook the pasta and reserve about 1/4 cup of the pasta water.
  5. Stir the cheese and tomatoes together to create a sauce. Add pasta and basil and stir. Add pasta water if it's too thick. Serve!

Notes

  • You can also use Laughing Cow Garlic and Herb cheese, which tastes a little better but isn't as macro-friendly
  • This also makes great meal prep! Just store in an air-tight container and microwave for 1 minute 30 seconds when ready to eat.
  • It's even better if served with baked chicken breast.

I made this tonight with a few minor changes.. I added some fresh mushrooms that needed to be used up.and served it with zoodles instead of pasta. I was worried about needing the pasta water, but it turned out fine. It was delicious!
