Who doesn’t love a good pulled pork sandwich?! I’ve made this recipe what feels like a thousand times and I’m so excited to finally share it.
I first made this recipe when I found it on The Salty Marshmallow and I was shocked at how much better it was than other recipes I’ve made.
There are a few tricks that make this Instant Pot Pulled Pork recipe better than the rest.
How to Make Instant Pot Pulled Pork
- Cut the pork into pieces. THIS IS THE SECRET. The reason this pulled pork has so much flavor is because you rub each pork cube with seasoning on all sides, then sear it to get nice and brown on all sides. This is what gives the pork so much amazing flavor. It takes a little more effort but it’s a much better method than just searing the pork whole.
- Mix the perfect sauce. The combination of apple cider vinegar and barbecue sauce is perfectly tangy and just a little bit sweet. I use Sweet Baby Ray’s barbecue sauce and have strong opinions that it is the best.
- Combine and cook. The Instant Pot is great because it lets you sear right in the pot to avoid extra dishes. Just cook on manual High pressure for 40 minutes and it’ll taste like it cooked all day.
- Serve and EAT. I like to serve pulled pork on Dave’s Killer Bread Buns with coleslaw and potato salad. YUM.
How to Store Instant Pot Pulled Pork
Pulled pork makes great leftovers and it’s super easy to make ahead of time.
Store the pulled pork in an air tight container in the refrigerator for up to 4 days. This Ello 8×8 baking dish with lid is the perfect size.
To freeze, place the cooled pulled pork in a freezer bag and try to squeeze as much air out as possible. Push down against a counter to flatten it as much as possible and freeze to save space!

Instant Pot Pulled Pork
Instant Pot Pulled Pork taste like it cooked all day but is ready in about an hour! Cooking it in the Instant Pot means no extra pans to wash.
Ingredients
- 3 pound boneless pork roast or pork butt
- 1 Tablespoon coconut sugar
- 2 teaspoons paprika
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 1 teaspoon salt
- 1 teaspoon pepper
- 1/2 teaspoon cumin
- 1/4 teaspoon cayenne
- 2 Tablespoons olive oil
- 1 1/4 cup chicken broth, divided
- 1/3 cup apple cider vinegar
- 2 cups barbecue sauce, divided (I use Sweet Baby Ray's)
Instructions
- Cut the pork into 6 pieces (about 3-inch cubes).
- In a small bowl, combine coconut sugar paprika, garlic powder, onion powder, salt, pepper, cumin and cayenne.
- Rub the spice mixture all over the pork pieces.
- Turn your Instant Pot to sauté mode. Add the olive oil and cook the pork for 3 minutes per side on all sides. (You may need to work in batches. The pork should get nice and brown).
- While the pork is cooking, mix 1 cup of chicken broth, apple cider vinegar, and 1 cup of the barbecue sauce together.
- Once the pork is seared on all sides, turn the Instant Pot off and add the remaining 1/4 cup of chicken broth. Use a wooden spoon to scrape up all the brown bits from the bottom of the pot.
- Pour in the barbecue sauce mixture and toss to coat. Cook on high pressure for 40 minutes. After it cooks, let the pressure release naturally for 10 minutes then quick release.
- Remove the pork, shred, and add the remaining 1 cup of barbecue sauce.
