Talk about a crazy month. Pat and I have been apartment searching all month to move in together May 1st! The countdown is on to find a place in the next two days because I really want to sign a lease before I leave. Hello, stress!
Every time I have months like this, meal prep becomes extra important. If I take an hour to prepare lunches and dinners at the beginning of the week, it seriously makes all the difference in bringing my stress levels down.
I’ve been scarfing these Chicken Avocado Rice Meal Prep Bowls in between apartment showings and they’re AMAZING.
How to Make Chicken Avocado Meal Prep Bowls
First of all, I love Trader Joe’s Chile lime seasoning because it’s a shortcut to making really delicious chicken. Just sprinkle that stuff all over your chicken and you’ve got yourself a darn good bird.
Secondly, I recommend investing in a cast iron skillet. I think chicken and salmon are 100x better if made in cast iron. I made this chicken in a cast iron grill pan, which I think adds great flavor to both the chicken and the onions.
Third: THE ONIONS. Grill them in the same pan as you just made your chicken and they really bring these bowls to the next level.
I used Banza’s new chickpea rice (yum) as my base, but you could use brown rice, cauliflower rice, or just lettuce if you want more of a salad.
How to Reheat Chicken Avocado Meal Prep Bowls
The beauty of these chicken meal prep bowls is that I think they actually taste amazing cold. The tomato salad mixes with the chicken, avocado and onions in such a yummy way. I just love them!
If you prefer to eat these warm, make sure you store your avocado in a separate container. Microwave for about 2 minutes, then top with avocado.

Chicken Avocado Rice Meal Prep Bowls
Ingredients
- 2 boneless, skinless chicken breasts
- 1 onion, sliced
- 2 tablespoons chile lime seasoning
- Salt and pepper, to taste
- 2 tablespoons extra virgin olive oil
- 1 large avocado, diced
- 1.5 cups brown rice, chickpea rice, orzo or cauliflower rice
- 3 cups cherry tomatoes, sliced
- 1/2 cup red onion, diced
- 1/2 cup cilantro, chopped
- 1 jalapeno, diced
- Juice of 1 lime
Instructions
- Season chicken chile lime seasoning, salt, and pepper, to taste, on both sides.
- Season onion with chile lime, salt, pepper and toss to coat.
- Heat oil in a cast iron skillet and cook chicken on both sides until cooked through, about 5 minutes per side. Remove and set aside.
- In the same pan, add onion and cook until soft, about 10 minutes.
- Dice chicken. Prepare rice according to package directions.
- In a medium bowl, combine tomatoes, jalapeno, cilantro, red onion, and lime juice. Season with salt and pepper, to taste. Toss to combine.
- Divide rice, chicken, avocado, tomato salad, onions and rice amongst four glass food storage containers. Cover and refrigerate until ready to eat.
- Eat cold within 5 days. Enjoy!
Notes
The avocado will get slightly brown after about a day. If that turns you off, pack the avocado separately and dice right before you eat.
If you prefer to eat it hot, pack the avocado and tomato salad separately. Microwave chicken with rice and onions for about 2 minutes. Toss with tomato salad and avocado to eat.

I just made this and it's excellent!! The only thing that I left out was cilantro, but only because I didn't want to get a whole bunch and then have half go bad. I think this will be in my regular rotation from now on! Thank you!
