This quarantine must really be getting to me because I spent a good hour the other day reading back through my old blog posts and I have to say … I miss my creative writing!

I used to love getting fun and creative with the way I wrote my blog posts. Mostly because that was back before Instagram when people actually READ blogs. (If you don’t know what I mean, read through Pioneer Woman‘s old posts. They were always my favorite to read).

Now, I tend to just flow through the bare minimum 300 words to get you to the recipe and on with your busy life. But it’s not nearly as fun. Anyone else miss the gold ole days?!

Anyways, as I mentioned: you’re busy, I’m busy. We all just want to make some chicken. So here are the deets.

How to Make Instant Pot Shredded Chicken

Oh man … it really is so easy. Each one of these recipes uses as little as 3 ingredients and take just minutes to prepare. PRAISE THE LAWD!!

I love the Instant Pot because I find that the chicken isn’t quite as dry as when I cook it in a slow cooker.

Your chicken might look a little juicy at the end, but mine absorbed a lot of the liquid as it sat. I also like to store it in the juices so it doesn’t dry out!

Please be careful using your Instant Pot and read the directions if it’s your first time. Once you get the hang of it, it’s so easy!

BBQ chicken is probably one of the most crowd-pleasing things you can make. I mean … what’s not to love?!

I love serving these on whole wheat rolls with cheddar cheese and pickles and some extra BBQ on top. It’s also great in a BBQ chicken salad, over baked nachos, or piled on top of a baked sweet potato. The possibilities are endless!

Oh, and since I’m from Illinois, you better believe I use Sweet Baby Ray’s.

This is literally the perfect quick and easy recipe for taco night. Then, use the leftovers on a salad, to make homemade baked nachos, or even in a homemade burrito bowl. YUM!

How to Cook Frozen Chicken Breasts in the Instant Pot

Forgot to thaw your chicken? No problemo!!

Did you know you can cook frozen chicken breasts in your Instant Pot? The directions remain the same … just place the frozen chicken breasts in the pot and cover with seasonings and sauces.

Make sure to increase the cooking time to 15 minutes, then let pressure release naturally until the valve is down.

Make sure the internal temperature of the chicken is 165 degrees F.

How to Freeze Instant Pot Shredded Chicken

What’s even better is that this delicious chicken can be frozen for future use! Just transfer the chicken to an air-tight container (I like these or these) and freeze.

To thaw, place frozen chicken in the refrigerator over night and reheat in the microwave or on the stovetop.

Ingredients

Instant Pot BBQ Chicken

  • 3 boneless, skinless chicken breasts (2 pounds)
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder
  • 1/4 cup chicken stock
  • 1.5 cup BBQ sauce

Instant Pot Buffalo Chicken

  • 3 boneless, skinless chicken breasts (2 pounds)
  • 2 Tablespoons ranch seasoning mix (such as Hidden Valley)
  • 1.5 cup Frank’s RedHot Buffalo Sauce
  • 1/4 cup chicken stock
  • 3 Tablespoons butter

Instant Pot Salsa Chicken

  • 3 boneless, skinless chicken breasts (2 pounds)
  • 2 Tablespoons taco seasoning
  • 2 cups salsa

Instructions

  1. Place chicken breasts in Instant Pot. Sprinkle the chicken with seasoning, then pour the remaining ingredients on top.
  2. Place the lid on the Instant Pot and turn the valve to Sealing position. Press the Pressure Cook button and set the timer for 10 minutes.
  3. Allow a 10-minute natural release, then turn the valve to Venting to release any remaining pressure.
  4. Open the lid and shred the chicken using two forks or a hand mixer. Serve!

Notes

The ingredients are listed separate, but the directions are the same for all three version!

To cook chicken from frozen, follow the directions as listed but cook for 15 minutes, then let natural release for 10 minutes. Make sure to check for doneness!
