Okay, so I’m officially in “oh crap my sister’s wedding is in two months and I have to fit into my Maid of Honor dress” mode.

With an apartment move coming up, last-minute taxes to do, and a few trips planned this month … I’d say I’ve got myself a pretty busy couple of weeks.

And since busy weeks and healthy eating don’t exactly go together like Spongebob and Patrick, I rely heavily on meal prepping to stay on track.

From turkey meal prep recipes, to breakfast meal prep recipes, to meal prep snack bowls … I’m serious about preparation you guys!

Grilled Chicken Meal Prep Bowls: 5 Ways

That’s why I absolutely love these Grilled Chicken Meal Prep Bowls recipes. Preparing a bunch of different flavors at once means you won’t get bored of having the same meal every day.

Plus, you can never really have too many chicken meal prep ideas!

Batching your meal prep together on a Sunday only takes about 1-2 hours of your time and you’ve got lunch and dinners for the week!

All you have to do is nuke them and they’re ready in under 2 minutes (to eat alone or to throw in your favorite recipe).

For the chicken in these bowls, you can choose to use pre-cooked chicken (like rotisserie chicken or grilled chicken strips from the grocery store), or cook your own chicken.

I’m especially a big fan of cooking chicken in an Instant Pot – it only takes 10 minutes and you don’t even have to thaw it first!

These grilled chicken meal prep bowls recipes are designed to make all in a big batch. It’s the perfect way to avoid boredom by making the same thing to eat each day of the week.  You can, however, choose just one or two to fit your taste.

I like to buy these food storage containers on Amazon because they’re all the same size and stack nicely in my fridge (and they’re cheap ;)).

  • Simple Chicken and Vegetable Meal Prep Bowl – mix up the veggies to whatever you have in your fridge!
  • Chicken Burrito Meal Prep Bowl – or chicken taco meal prep bowl … whatever you call it, it’s dang good.
  • Zucchini Chicken “Pasta” Meal Prep Bowl – buy pre-spiralized zucchini to save time. Or, use spaghetti squash.
  • Teriyaki Chicken and Broccoli Meal Prep Bowl – better than Chinese takeout
  • Simple Kale Salad (Okay so this one isn’t really a recipe, but it’s the one I make the most! Simple salads are perfect for dinner add-ons or quick lunches)

How Long Will Chicken Meal Prep Keep in the Refrigerator

If you’re using glass food storage containers with snapping air-tight lids, your chicken meal prep bowls will last in the fridge up to 7 days. If you’re using semi-disposable plastic food storage, I’d recommend eating these within 4 days.

How To Reheat Chicken Meal Prep Bowls

To reheat these beauties, just stick them in the microwave for about 2 minutes.

You may want to leave some garnishes aside while you reheat these bowls (for example, lime and cilantro on the taco bowl).

  1. Preheat oven to 425 degrees F.
  1. Prepare the Curry Baked Sweet Potatoes and Lemon Roasted Brussels Sprouts on separate sheet pans.
  2. Cut the ends off the asparagus and arrange on a third sheet pan. Drizzle with olive oil, salt and pepper. Bake sweet potatoes and brussels sprouts for 30 minutes, flipping half way through. Bake asparagus for 15 minutes or until done to your liking.
  3. Arrange vegetables and sliced chicken in meal prep bowls. Microwave 2 minutes to serve.

Easy Chicken Meal Prep Bowls: Chicken Burrito Bowl

This chicken meal prep recipe for a chicken burrito bowl is super easy to assemble for lunches!

Ingredients

  • 2 chicken breasts, cooked
  • 2 cups brown rice, cooked
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, drained
  • 1 avocado, sliced
  • cherry tomatoes, halved
  • 1 red pepper, sliced
  • Cilantro, for garnish

Instructions

  1. Cut the chicken breast into slices or cubes. Divide all ingredients amongst 4 meal prep bowls.
  1. Microwave 2 minutes to serve (I recommend packing the tomatoes and avocados separately).

This chicken meal prep bowl is zucchini noodles topped with chicken and pasta sauce for a low carb meal prep recipe.

Ingredients

  • 2 chicken breast, cooked
  • 2 zucchini, spiralized
  • 1/2-1 cup pasta sauce
  • Olive oil

Instructions

  1. Heat 1 tablespoon olive oil in a medium pan. Cook the zucchini noodles until tender. Drain any excess liquid.
  1. Place the zucchini noodles in a meal prep bowl topped with pasta sauce and sliced chicken.
  2. Microwave 2 minutes to serve.

This Teriyaki Chicken and Broccoli meal prep bowl is simple, healthy and perfect for meal prep.

Ingredients

  • 2 chicken breast, cooked
  • 1/2 cup teriyaki sauce
  • 2 cup brown rice, cooked
  • 2 head broccoli, chopped
  • 1 red pepper, sliced
  • Sesame seeds, for garnish
  • Green onion, for garnish

Instructions

  1. In a steamer or pan with steam basket, steam the broccoli and red pepper together for 4-5 minutes or until tender.
  1. Arrange rice, vegetables and sliced chicken in meal prep bowls. Pour 2 Tablespoons of teriyaki sauce over each bowl. Garnish with sesame seeds and sliced green onions.
  2. Microwave 2 minutes to serve.
