Am I the only weirdo who actually LOVES salad?! I like to make a side salad with almost every dinner so I can make sure Pat and I get enough veggies in. Since I’ve been doing this, I’d like to think I’ve become a sort of salad connoisseur.

This Antipasto Salad is inspired by the first course of an Italian meal, which includes meats, cheeses, olives and more. Since I started making this salad, I’ve probably had it at least once a week. It’s also the salad I love to make when entertaining. It’s also very similar to my favorite pasta salad. It’s just SO GOOD. And it’s keto friendly!

I’m convinced that the key to a really good salad is homemade dressing. This homemade balsamic dressing is the one I make hands down most often. I love making a batch at the beginning of the week to use all week.

Making homemade dressing is SO easy and saves money. Don’t be intimidated!

My Favorite Antipasto Salad

The beauty of this salad is also that you can customize it to use up whatever you have in your fridge.

Instead of salami, use pepperoni or any other deli meat. You can use any olives you want – green, black, kalamata. Instead of mozzarella, use parmesan or provolone. Feel free to mix it up!

My Favorite Antipasto Salad

My Favorite Antipasto Salad is an Italian salad with vegetables, meats, cheeses and a delicious homemade balsamic dressing.

Ingredients

  • 8 cups greens of your choice (chopped romaine or baby spinach are what I use most often)
  • 4 ounces salami, diced
  • 8 ounces mozzarella balls, halved
  • 1 red pepper, diced
  • 1 cup artichoke hearts, quartered
  • 1 cup cherry tomatoes, halved
  • 1/2 cup pepperoncini, chopped
  • 1/2 cup green or black olives, sliced
  • 1/4 cup red onion, diced
  • 8 basil leaves, cut into ribbons

Homemade Balsamic Dressing

  • 3/4 cup extra virgin olive oil
  • 1/4 cup balsamic vinegar
  • 1 tablespoon honey
  • 1 tablespoon dijon mustard
  • Salt and pepper, to taste
  • 1 garlic clove, minced

Instructions

  1. Combine all salad ingredients in a large bowl.
  2. In a small mason jar or food storage container, add all dressing ingredients. Close the container and shake to mix! (Or use a bowl with a whisk).
  3. Pour dressing on salad (to taste, you might not need it all), and toss to coat. Serve immediately.
