Have you ever imagined what life would be like without cheese? It’s probably one of the most unpleasant thoughts ever.

I mean, all the best foods have cheese. Without cheese, there would be no pizza. Or cheeseburgers. Or bricks of cheese to go with your wine.

Most importantly, without cheese there would be no SPAGHETTI SQUASH LASAGNA. And that would be most tragic because this Spaghetti Squash Lasagna with Turkey Meat Sauce is seriously good. And seriously loaded with cheese.

Spaghetti squash is one of my favorite pasta replacements all year around. I love using it in pizza recipes, and in my two favorite casserole recipes here and here).

So, when I saw a recipe for spaghetti squash lasagna on SkinnyTaste, I knew I had to give it a try.

I used a super simple turkey meat sauce to add a bit of protein, and added an egg to the ricotta mixture so that it holds a firmer texture.

This recipe is quite simple because it uses jarred marinara sauce! You can use homemade if you’re ambitious, but I’m a big fan of the jar.

I also like to make the spaghetti squash ahead of time. Cut it in half, scoop out the seeds, and either bake or microwave it. Bake at 375 degrees for 30-45 minutes or microwave in 3 minute increments until the squash is soft. Then, extract the squash with a fork and refrigerate it until it’s time to assemble your lasagna.

Like any lasagna, this keeps quite well in the refrigerator if you want to reheat leftovers. I did not try to freeze it, but I would guess it would hold up in the freezer as well!

Spaghetti Squash Lasagna with Turkey Meat Sauce

Ingredients

  • 1 jar marinara sauce (preferably with veggies in it!), or 2 cups homemade marinara sauce
  • 1 pound lean ground turkey
  • 3 cups cooked roasted spaghetti squash
  • 16 ounces part skim ricotta
  • 1 egg
  • 1 tsp Italian seasoning
  • 1/2 cup parmesan cheese
  • 1 cup part skim shredded mozzarella

Instructions

  1. Preheat the oven to 375 degrees F.
  2. In a large pan, cook the ground turkey until brown. Add in the marinara sauce and simmer for 5 minutes.
  3. In a medium bowl, mix the ricotta, Italian seasoning and egg together.
  4. Spray a 9x11 baking dish with cooking spray. Spoon enough meat sauce in the pan to cover the bottom. Spread 1.5 cups spaghetti squash on top. Layer with all the ricotta mixture, half the parmesan and mozzarella cheese, the remaining spaghetti squash, the remaining meat sauce, and top it off with the remaining parmesan and mozzarella.
  5. Cover and bake for 20 minutes. Uncover and bake for an additional 10 minutes. Enjoy!

Was AMAZING!! Made this for dinner but added meatballs for fun. Had to use ground beef because didn’t realize it was turkey. It’s also approved by a picky 13 yr old boy who never eats my “new” stuff!

I made this tonight, but I substituted cottage cheese for ricotta, grass fed-grass finished beef for ground turkey, and shredded Swiss and Gruyere for Mozzarella. I kept everything else the same, and it was AMAZING! Might I also add that I cooked my spaghetti squash in my Ninja Foodi 20 min. On steam cook and 20 minutes on pressure cook. I used 2 spaghetti squash, cooked them at the same time, and then doubled the recipe. I hope It freezes well, because it made a huge lasagna. Thanks for sharing this recipe!

Yes! I’d give it a quick blend in a blender or food processor to achieve the best consistency.

How does spaghetti squash taste? Sweeter like winter squashes or icky like summer ones? Trying to get up the nerve to try it. ^^^Looks good.

It's not very sweet at all, I don't think it has a strong taste. The sauce in this recipe especially overpowers any taste.
